Nothing special for Sunday dinner here this week. I boiled some chicken so the kitties could have fresh broth, and then there is always: "what can I make for myself with plain boiled chicken?" I had a nice tomato and some good things in the refrigerator so a salad was the result. Romaine lettuce, tomato, boiled chicken, Swiss cheese, hard boiled egg, and bell pepper topped with Wishbone Light Parmesan Peppercorn Ranch dressing. It was really quite delicious.

We had kabobs, ribs, arroz, menudo, corn, potato salad and a ton of deserts out, but all I ate was the menudo :)
I cheated last night; Scott and I just went out for dinner at the Indian place.
I took the day off from cooking and DH wanted to finish up a chicken breast left over from a whole roaster I made on Saturday so I had a Sonic Hot dog.

I'm going to fix some talapia and scallops in garlic butter. Then I'm going to make garlic cheddar biscuits made with coconut flour so that they're low carb. And maybe some green beans or a small salad.
My stove has been on the outs since last week and we've been eating lots of salads, plus using the microwave, toaster oven and crockpot a lot!!!!
