I broke out good ol' Mr. Crockpot the other day for some cookin' times. I had about a pound and a half of chicken that I'd defrosted and needed to use, so I figured I would just throw it in with the other half of that Crockpot Meal Kit thingy. Except that I realized I needed a Cream Of... soup for that and had none. Plan B!
Here's what I did:
Ingredients:
1.5 lbs boneless, skinless chicken breast
1 can peeled Roma tomatoes
Herbs and spices of choice
Garlic, minced
1/4 jar hot salsa (I used Mrs. Renfro's Salsa Verde)
Buffalo sauce- a few dashes (optional)
It cooked for somewhere between 4 and 5 hours, until the chicken was easily flaking apart and shredable. As I stirred it up, basically all of it fell into shreds-- perfect!

This would make a great filling for something-- burritos, empanadas, enchiladas, tacos... maybe on top of pizza even.
The first night, I just put it in a bowl with some cheese on top. Delicious! I also froze some for future eating.

Yesterday, I made an open-faced sandwich with cheese on top and heated it in the toaster oven.

I think I'll buy some tortillas to make the rest into something vaguely enchilada-like.

That sounds great! I may make that tomorrow. I've got a couple of random chicken breasts in the freezer that I was looking for something to do with them.
I'd steal that whole crock pot and RUN!
