Summer Holiday Supreme Potato Salad

Yield: 6 servings
3 lb Red potatoes peeled & diced
1/3 c Cider vinegar
2 ts Sus Dry mustard
1 1/2 ts Salt
3/4 ts Black pepper
1/2 c Mayonnaise
1 ea Celery rib diced small
1/2 c Sour cream
1/4 c Heavy cream
3/4 c Onion chopped
2 tb Pimiento chopped
2 tb Sweet relish
3 ea Bacon strips fried crispy
2 ea Hard-boied eggs peeled & chopped
Boil your potatoes until tender.
Whisk together your vinegar, sugar, mustard, salt & pepper.
Drain potatoes then stir them into your vinegar mixture.
Allow them to marinate for 25-30 mins.
Whisk your mayonnaise, sour cream & heavy cream.
Fold this mixture into your potato mixture.
Mix in your onions, pimientos, relish & hard-boied eggs.
Cover then refirgerate for 4-24 hrs.
