This turned out excellent Heidi!

vegetable or olive oil
1/2 lb beef stew meat, cubed
1/2 onion, chopped
1/2 green pepper, chopped
1 stalk celery, chopped
2 cloves garlic, minced
1/2 t ground cumin
1/2 t oregano, rubbed
1 bay leaf
salt and pepper to taste
1 cup beef broth
1/2 cup black coffee
1/2 cup red wine
2 T worchestershire sauce
2 medium potatoes, peeled and cubed
Saute meat in a little oil over medium high heat til brown. Stir in onion, green pepper and celery and cook another 5 minutes or so. Stir in seasonings and cook another minute.
Add broth, coffee, wine and worcestershire and bring to a simmer.
Cover; reduce heat to medium low and cook 1 hour, or til beef is tender.
Stir in potato and cook another 15 minutes or til potatoes are tender.
I served the caldillo with homemade buttermilk cheese bread.
