Ukrainian Meat Stuffed Blinchiki

Yield: 16 blinchiki
2 ea Eggs
1 tb Sugar
1/3 ts Salt
2 c Whole milk
1 1/5 c All-purpose flour
2 tb Sunflower oil
2 tb Butter
1 ea Onion minced
1 lb ground beef or ground pork
1/2 ts Garlic powder
Salt & black pepper to taste
Heat your butter in a skillet.
Add onion & beef.
Cook while stiring frequently until your meat is well browned.
Season with garlic powder then salt & pepper to taste.
Remove from heat then allow to cool while you prepare your blinchiki.
Combine all your ingredients then stir until fully combined & your mixture is smooth with no lumps.
Heat a lightly greased griddle or large cast iron skillet over med-high heat.
Pour batter onto griddle by a 1/4 cup per pancake.
Cook until lightly brown on 1 side then flip over & lightly brown that side also.
Stack your cooked blinchiki on top of each other on a plate.
ut about 1 tb of filling onto center of blinchiki.
Now fold sides then roll up to obtain an envelope.
Heat a lightly greased griddle or a frying pan over med-heat.
Cook your stuffed blinchiki until lightly browned on both sides.
Drain your stuffed blinchiki on paper towels.
Serve warm with generous dollops of sour cream.
