This recipe has the best of both worlds, potato and bacon! Really tasty side dish for the family dinner. This recipe serves around four people and takes about 45 minutes to prepare, Enjoy!
6 slices bacon - rindless
2 pounds Potatoes (white rose are my favorite, but you can use whatever type you prefer) - scrubbed
olive oil cooking spray
Mustard Chive Cream:
8oz sour cream
2 tablespoons wholegrain mustard
2 tablespoons finely chopped chives
Preheat oven to 400.
Cover a baking tray with baking paper.
Cut the bacon into 3/4 inch wide lengths.
Wrap bacon around center of each potato so the bacon slightly overlaps and secure with the toothpicks.
Place onto the baking tray and spray with oil.
Bake for 40 minutes or until bacon is crisp and potatoes are tender.
To make chive cream combine the ingredients and season with salt and pepper. Serve with potatoes.
