Mom made this wonderful soup today for lunch. It was served with fresh rolls that I bought from a local craft show that was going on in town.
1 lb ground beef
1/2 an onion, chopped
2 stalks celery, chopped
1/4 head cabbage, shredded or chopped
1 large can tomato juice
1 small can diced tomatoes
1/2 cup each: frozen corn and peas
Italian seasoning to taste
garlic powder to taste
salt and pepper to taste
In a large Dutch oven or soup pot brown ground beef. Stir in onion and celery and cook another 5 minutes or so. Drain well.
Stir in remaining ingredients and bring to a boil. Cover and simmer 1 hour, stirring occasionally.
Serve with buttered rolls.
