Love peanut butter? Love to bake? Then you have got to make these Peanut Butter Sandwich Cookies. They take a little time and effort, but the deliciousness of them is worth it. This recipe was clipped a long time ago from Farm Journal Magazine. You could be adventurous and make a chocolate filling for them!
Peanut Butter Sandwich Cookies
1 cup butter
1 cup sugar
1 cup brown sugar, firmly packed
2 eggs
1 cup crunchy peanut butter
1 teaspoon vanilla
3 1/2 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
In large bowl, cream together butter, white and brown sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in peanut butter and vanilla.
Sift together flour, baking soda and salt. Stir into sugar mixture. Form dough into 1-inch balls. Place 2-inches apart on greased baking sheets. Flatten dough with a floured fork, making a crisscross design. Bake at 375 degrees for 8 minutes. Cool.
Peanut Butter Filling
1/2 creamy peanut butter
1 teaspoon vanilla
3 to 4 tablespoons milk
3 cups powdered sugar
In medium bowl, combine peanut butter, vanilla and milk. Beat until smooth. Gradually beat in powdered sugar.
Spread a generous amount on bottom of a peanut butter cookie, top with another cookie, forming a sandwich.
Makes about 4 dozen cookies.

I do have a peanut butter bar recipe which has a chocolate & peanut butter frosting. They are better than eating Reese's peanut butter cups.
