This bread was delightful!
Dad and I served it with pb & j.
2/3 cup sugar
1/3 cup butter, softened
3 eggs
3 T buttermilk
1 cup grated apple (I used macs)
2 cups flour
1 t baking powder
1/2 t baking soda
1/3 t salt
pinch cinnamon
1/2 cup chopped nuts (optional)
In a large bowl, cream sugar, butter and eggs.
Stir in the buttermilk and apples.
In a seperate medium bowl, stir together flour, baking
powder, baking soda, salt, cinnamon and nuts, if using.
Add the dry ingredients to the apple mixture.
Pour batter into a 9x5" loaf pan that has been sprayed with cooking spray.
Let stand 20 minutes.
Meanwhile, preheat oven to 350°.
Bake bread 45-50 minutes or til a pick inserted in the center comes out clean.
Let bread cool in pan a few minutes, then turn out onto a rack to finish cooling completely.

I'm Happy that You like it. I have not thought to cover it with Peanutbutter @ Jelly before.
I just always put a little butter on it.
