These cake-like cookies use a ripe banana and mini semi-sweet chocolate chips. A great combination! If you like banana bread or muffins, you will love these Banana Chocolate Chip Cookies.
I found the recipe in The Best of Country Cookies book which was published by Reiman Publications in 1999. The book is no longer being sold by Reiman, but you can pick up used copies at Amazon.  There are a lot of wonderful cookie recipes in it.Â
Banana Chocolate Chip Cookies 3/4 cup shortening Cream together shortening and sugar in mixing bowl. Beat in eggs. Then beat in milk, honey and banana. Combine flour, baking powder and salt. Gradually add dry mixture to banana mixture, beating until well mixed. Stir in chocolate chips. Drop dough by heaping teaspoonfuls 2-inches apart onto lightly greased baking sheets. Bake at 350 degrees for 10 to 12 minutes until edges are lightly browned. Makes 5 dozen cookies.
