Bif Paprikasjz - Beef Paprikash

2 lb Chuck steak lean & cubed 3/4"
1 ea Onion sliced fine
3 tb Oil
1 c Button mushrooms
1 ts Dijon-style mustard
1 ts Sugar
1/2 c Veal or chicken stock
2 tb Sour cream
2 tb Plain flour
1/3 ts White pepper
Dredge steak in seasoned flour then brown in heated pil in a large pan.
Remove browned meat to a bowl using a slotted spoon.
In same pan brown mushrooms & remove them to bowl with meat.
Add oil if necessary.
Fry onion until browned but not burned & add paprika then cook 2-3 mins.
Add msutard & sugar & stir well.
Add stock, stir, add sour cream, stir again & fold in beef & mushrooms.
Lower heat, cover & simmer slowly for 2-3 hrs.
