|What a simple and yummy dish! I sure did miss the real bacon though.|
2 cups radiatore pasta (or your favorite variety)
1/2 lb turkey bacon, diced
1 clove garlic, minced
1 large boneless, skinless chicken breast, diced
1/2 cup dry white wine
2 large tomatoes, diced
1 t dried Italian seasoning, rubbed
salt and pepper to taste
Parmesan cheese to serve
Bring a large pot of lightly salted water to a boil. Add pasta and cook as package directs; drain.
Meanwhile, brown bacon in a large frying pan. Stir in garlic and infuse for a few seconds. Remove mixture from the pan with a slotted spoon. Saute chicken til golden brown. Remove and set aside.
Stir in wine, tomatoes and seasonings. Simmer til tomatoes are cooked, and sauce is thickened, 15-20 minutes.
Stir in chicken and bacon mixture and bring to a simmer to heat through.
Serve sauce over pasta with Parmesan.
