I was wondering if anyone had any kid-friendly recipes using black beans. I have several cans in the pantry but my kids are not really fans of anything involving beans. How can I come up with a way to make them taste good to the kids, while keeping it simple, inexpensive and fun? I am usually pretty good at improvising in the kitchen with a few simple ingredients, but after a few tries with black beans and rice that didn't quite come out right, I'm a little stumped on this one!
I would appreciate any suggestions or tips you might have. Thanks in advance!

Whip them up into a paste - "refried beans"
1 can diced tomatoes w/green chilies (or I sometimes use salsa)
1 can black beans drained
I mix them in a bowl, the microwave 5 minutes. Stir. Microwave another 5 minutes, stir. Keep doing that until the liquid from the tomatoes is absorbed. Top with shredded cheese of your choice and serve with tortilla chips. I Love it!
my kids like black beans and we often have them in a tortilla with shredded cheese
canned black beans, rinsed and drained
hamburger meat, cooked with taco or burrito seasoning
brown rice, cooked
can of Rotel tomatoes (your favorite level of heat--I like mine HOT)
shredded cheese, Mexican blend
burrito wrappers

Combine taco meat, beans, tomatoes and rice in a microwave bowl and heat until bubbly and most of the tomato juice has been absorbed. Stir in enough shredded cheese to make it thick and hold together.
Heat a skillet and add a little oil (so the wrappers don't stick). Heat a wrapper until soft (this doesn't take long at all) and then quickly fill and roll up neatly and place in a casserole dish. Keep warm until ready to serve.
Can also add chopped lettuce when stuffing the burritos--makes it a sort of soft taco.
Or place the stuffed burritos (sans lettuce) in a casserole dish and cover with enchilada sauce and more cheese; bake, covered until burritos are soft and slice easily in the dish (about 30 minutes) then uncover and let bake a little longer until cheese is golden on top.
Black Bean Brownies
1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
1/4 cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
3/4 cup white sugar
1/2 cup milk chocolate chips (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
