Yuri's Botvinia

Yield: 8 Servings
1 ea Cucumber lg peeled 1/2"d seeded & diced
2 oz Vodka
1 1/2 qt Beer
3 qt Water
6 tb Lemon juice fresh
1 1/2 lb Spinach leaves fresh washed
1 1/2 lb Sorrel leaves fresh
2 tb Horseradish
1 ts Salt
3/4 ts Sugar
1 1/2 lb Poached sturgeon 1" pcs*
1/2 lb Crab meat
1 c Scallions sliced
3/4 c Onion chopped
1 ea Garlic clove minced

4 tb Dill fresh minced
*NOTE: Any firm white fleshed fish may be substituted for sturgeon.
Boil 3 quarts of water in a large pot.
When boiling briskly add the spinach & sorrel.
Cook uncovered at a brisk boil for 6-8 minutes.
Drain water off then rinse vegetables in cold water.
Puree vegetables in blender.
Cool to room temp.
Combine with other ingredients & add to pot.
Cook for 30 mins. a slow boil.
Serve hot garnished with dill.
