I was one of the lucky gather members chosen to receive a coupon for a free Del Monte product. Since I am a frugal shopper, I made sure to use the Del Monte coupon on a BOGO sale, and this week they had Del Monte tomatoes on BOGO, so I made sure to grab two cans to add to my pantry.
The other day I posted about the meat and veggie lasagnas I made with Del Monte Basil, Garlic and Oregano Diced Tomatoes. On Monday night I made dinner with Del Monte Garlic and Olive Oil Petite Cut Diced Tomatoes.

Since my family consists of two big meat eaters, one vegetarian and one very picky toddler dinner can be quite interesting. On Monday I made beef stew with tomatoes and rice and vegetarian pizza.

Beef Stew:
Before Christmas I had found a great deal on a beef roast (about $8), and I had cut it up into four meals = $2 per meal. I made one small roast, and three bags of cut up beef for stews.

For the stew I used:

Cut up beef
1/2 onion diced
1/2 red pepper
garlic
spices Adobe mix, cayenne, black pepper, garlic powder
1/2 can of Del Monte Garlic and Olive Oil Petite Cut Diced Tomatoes

1 cup of whole grain rice

I began with browning the beef in a big of extra virgin olive oil, and then I added the cut up veggies.

After letting it simmer for five minutes over low heat before adding the canned tomatoes and letting it simmer until dinner time.

For the pizzas I made a dough of whole wheat and regular flour. My neighbor came over to learn how to make pizzas, so it turned out to be quite a dinner.

For the sauce we used:

1/2 can of Del Monte Garlic and Olive Oil Petite Cut Diced Tomatoes
Dried basil (my fresh basil could not handle the cold)
Dried oregano
1/2 can of Del Monte tomato sauce
Minced garlic

Our Toppings:
Pineapple
Tomato
Red pepper
Red onion
Spinach (Boxed spinach is perfect for pizza. I found a great deal at Publix and paid 17 cents per box)
olives (Whenever I open a can of olives, I freeze the leftovers, and when I make pizza I just take out what I need and slice them.)
Fresh shredded mozzarella cheese (Free after coupons from Publix)

We each chose the toppings, and then we put the pizzas in the oven at 420F degrees on my Cuisine Art Pizza Pan.

The pizzas were fantastic, and so was the homemade pizza sauce. My husband and my oldest son both loved the beef stew, and they even asked for seconds. It is very easy to make your own pizza and pasta sauce with Del Monte canned tomatoes, and they are great for stews.

I don't cook with tomatoes too often, other than pizza sauce. My husband doesn't like tomatoes, and Elliott only likes them sometimes.
I fixed a pasta dish for dinner last night with Del Monte peas, mushrooms, pasta, tomato sauce and left over chunks of ham, then I topped it all with cheese - turned out great.
I didn't get a coupon, but maybe I'll post the next dish made with a Del Monte product, since that happens to be our favrite brand.

I'm whining because I'm sick and don't want to cook....after all I can't get everyone sick you know
I don't use canned tomatoes very often, but my husband likes tomatoes and noodles. We do use tomatoes with diced chilis to make meat dip, and I used it to make a spanish rice dish I found on gather the other night.
