Yesterday I spent the day, afternoon cooking for my husband and his praise team party.
One thing I made is so easy and so good.
Mini Fritatas.
If you ever need a quick appetizer this is it, and you can change what you put in for different flavors.
6 Eggs
1/2 cup whole milk
1/3 (I used more ) fresh parmesean cheese
handful of basil (small) adds really nice color
about 3-4 oz of ham ( I used prosciuto and shrimp)
dash of salt
beat the eggs and milk together
add the salt basil and ham
add the parsley
beat some more
Pour into greased mini muffin tins
bake in oven that has been heated to 375 degrees for 8-10 minutes. (toothpick should come out clean).
These literally take no more than 15 minutes to make (20 minutes max).....
Makes about 40 little fritatas.
Can be served warm or cold (they are so good straight out of the oven nice and warm).....
(I got this off of Food Network's sight, Giada had this up) She is know for having some incredibly simple but very very crowd pleasing appetizers.
