Well, I am trying to learn to cook healthier but you know it is really hard so I have started ot cut back on things slowly. I have been substituting spray Pam for grease for a long time. I am trying to cut back on my use of butter so I am going to share with you how I fixed supper. It is much healthier than I usually would cook. I hope it will also give you ideas on different ways to fix your food.
**I used to hate to cook. My mama always did all the cooking. I would help her but never paid any attention to how she made things or what she did. Now, my mama has passed away and I miss her so much and I wish I had asked many questions and watched closely how she cooked everything. There used to be a joke between us...She'd say one day it would be up to me to cook the Thanksgiving and Christmas meals. I would always tell her we'd go to McDonald's. LOL**
I thawed out my porkchops and put them in a gallon bag and put a small amoutn of water in the bag and sprinkled grill mates seasonings in the bag, I guess I might have put 1/4 cup in the bag because I had 8 porkchops. Huge Pork chops. I shook and manipulated the baggie so it would spread all over the porkchops and then let them set. I could go back and manipulate it again. Then warmed the George Foreman Grill up on Medium. I let them cook slow. They were so tender and so delicious. Compared to how I used to cook them. I would have put grease in the iron skillet - grrrrr - and fried those boogers done!
Then I put frozen corn on the cob in 1/2 bowl of water and a dollup of butter and my secret ingredient, " a tad of sugar" and steamed it in the microwave. YUMMY! Compared to how I used to cook them, I would have added 2 or 3 dollups of butter.
I opened my frozen bag of mixed veggies, including broccoli, cauliflower, carrots, etc. I dumped some in a bowl and added a dollup of butter again and I sprinkled shredded cheese on top. I stuck it in the microwave and steamed them. We would not have eaten this before because we didnt' care much for those veggies.
I tossed a potato, that was poked with holes, in the microwave and baked it. Then we topped with an itty bitty dollup of butter, sour cream if you like it, and shredded cheese. Comapred to how we could have eaten it before. There would have been lots more butter added to it with bacon bits to top it off.
**My dollups are a large serving spoonful. LOL**
Then we topped it off with the Frugal Potato Pumpkin/Pineapple Pie . This was pretty healthy believe it or not. Or as healthy as it could be. We had natural pineapple pieces and the potato pumpkin was organic!
