This was the side dish to the Catfish Florentine. Another simple recipe and so delicious. Boy that bacon really adds flavor.
Southern Fried Rice
4 slices bacon
1 tbsp green bell peppers, chopped
1 tbsp red bell peppers, chopped*
1 tsp soy sauce
1 medium onion
2 cups pre-cooked rice**
Fry bacon until crisp in heavy skillet (cast iron preferred).
Remove bacon from pan and fry chopped onion and peppers in the grease until browned.
Stir rice into the mixture. Crumble the bacon and add to the mixture with soy sauce. Serve
Risa's notes:
* The original recipe called for 1 tbsp chopped mushrooms. I substituted other colored bell peppers.
** I used basmati rice that I cooked earlier in the day. Do not use pre-packaged pre-cooked rice (or a boil in bag rice). Use freshly cooked rice. Makes all the difference in taste and texture.
