I adapted this from the April issue of Everyday with Rachael Ray Magazine. This came out great. I omitted the pine nuts and olives.

Quinoa with Herbs

1 tb extra-virgin olive oil
1/2 small onion -- finely chopped
1 clove garlic -- finely chopped
1 cup quinoa -- soaked & drained
salt
1/3 cup fresh basil leaves -- julienne strips
1/3 cup cilantro leaves, whole -- julienne strips
1/3 cup flat-leaf parsley -- finely chopped
In a large saucepan, heat the olive oil over MED heat. Add the onion and cook, stirring often, until soft, about 3 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Add the quinoa and cook, stirring, for 1 minute.
Stir in 2 cups water; season with salt and pepper and bring to a boil over HIGH heat. Lower the heat, cover and simmer until the water is absorbed, about 15 minutes. Let stand 5 minutes. Add the herbs and toss with a fork to combine; season with salt and serve.
