Dinner tonight was fried chicken. The first fried food I have made in a long time, like maybe a year or more.
I had seen J. Frugal Mom R.'s post that she used the Zatarain's Fish Fry mixture for chicken, so I resloved to try the same.
We haven't had fried chicken in ages, but it sounded so good. So I bought skinless chicken breast strips (half the package for tonights dinner & half tomorrow for chicken pot pie). Rinsed them, coated them in the Zatarain's mixture & fried them in Safflower oil - very lightly as I don't do well with a lot of grease.
It turned out very well! The breading is very light on the meat & had a good flavor, not spicy. I actually added some of the creole seasoning to the chicken on my plate & loved it, as I like my foods to be a bit spicy most of the time.
I served the chicken with mashed potatoes, frozen corn & some biscuits. I wanted to make gravy, but wasn't sure how it would taste with the Zatarains seasoning in it - so I skipped it.
