Yesterday for lunch I prepared the Zatarain's New Orleans Style Yellow Rice. I never follow directions on packages and this one was no different. I began by taking a couple large boneless chicken breasts. sliced them into strips.
I prepared a flour, black pepper, Zatarain's Creole seasoning and garlic powder mix to roll the chicken stips in.
I placed the flour mixture rolled - chicken breast strips in a heated cast iron skillet with olive oil in it.
I browned the chicken stips on all sides.
When the chicken breast was done I began to make the Zatarain's Yellow Rice. I measured 2 1/2 cups chicken broth and 2 teaspoons olive oil in a sauce pan. Heated to boil and added the Zatarain's Yellow Rice mix. Reduced heat and simmered covered.
While rice was simmering I made homemade alfrado sauce in the skillet that I had prepared the chicken stips in.
I added about 1 cup milk (I use powder milk and mix it to consistency of condensed milk) then I added about 1/3 cup parmesean cheese and a dash of garlic powder and dash of pepper. As it began to thicken I added another cup of milk until it reached the consistency I desired.
I served the Chicken Breast strips over a bed of Zatarain's Yellow Rice with Alfrado Sauce drizzled over it and a slice of Whole Grain Bread.
It made for a wonderful flavorful meal. The extras were needed to add flavor to the rice. Alone the rice was very bland.
