This was tonight's dinner - an adaptation of a recipe from the latest issue of Rachael Ray's magazine. The original called for using meat sauce and had their own recipe for dough. I changed the dough to my favorite pizza dough recipe and made the sauce with italian sausage instead of beef. I added pepperoni and 2 other cheeses to the original recipe. My son thought it was excellent. I loved the flavors.

Inside-Out Pepperoni Pizza Rolls

Dough:
1 1/2 ts SAF Perfect Rise yeast -- * see note
1 ts sugar
1 pinch salt
3 cups all-purpose flour
1/2 cup white whole wheat flour
1 cup warm water
2 tb extra-virgin olive oil
Roll:
2 cups meat sauce -- ** see note
pepperoni slices -- to fit dough
ricotta cheese -- to cover dough
1/2 lb mozzarella cheese -- in cubes
parmesan cheese -- to sprinkle over
1 lg egg -- lightly beaten
For dough: In bread pan of bread machine, place dough ingredients in order that manufacturer describes. Set to Dough Cycle.
When dough is done, punch down, cover and let stand for another 1/2 hour until it rises again.
Punch down. Place on an oiled surface, and roll out into a 12" x 15" rectangle.
Preheat oven to 375 degrees F.
Cover the surface with ricotta cheese, leaving a 1" border around the whole thing. Cover the ricotta cheese with meat sauce, then the pepperoni slices and then mozzarella cubes. Sprinkle the whole thing with parmesan cheese. Brush the edges with beaten egg.
Roll up from short side, seal, and then brush the top with the remaining egg.
Place on a parchment paper lined sheet pan. Bake in a 375 degree F oven for 40 minutes until nicely browned.
Cut into 4 pieces and serve with extra sauce on the side if you wish.

NOTES : Risa's notes:
* If you can't find SAF brand than use any brand of fast rising yeast.
** Recipe adapted from pg 77 of February 2009 issue of Everyday with Rachael Ray. In the original, it uses beef, I used sweet italian sausage. If you have homemade meat sauce, use some. If not, than use a good commercial brand.
If you do not wish to make your own dough, than use dough from the local pizza place OR a good commercial brand such as Trader Joe's. If using bought dough, then just follow directions from rolling out the dough.
