Caribbean Ginger Soup

Caribbean Ginger Soup

1 tb Butter
1 ea Onion minced
1 ea Crushed garlic clove
2 ts Curry powder
1/3 c Long-grained un-cooked rice
5 c Water
1 c Ginger beer
3 ea Cubes chicken bouillon
1/3 c Fresh or sour cream
12 oz Bananas peeled & sliced
1 1/2 ts Salt
1 ea Dash black pepper
1/2 ts Fresh lemon juice
2 tb Ginger root peeled & grated
-Garnish-
Leaf parsley chopped or cilantro chopped
4 tb Grated ginger root

Saute onion& garlic in butter.
Add ginger and then saute for 1 min. more.
Add curry then sautee for 2-3 mins.
Add rice then blend well.
Mix in water, beer & bouillion cubes.
Mix until cubes are dissolved.
Cover then boil for 20-25 mins.
Pour soup in a blender ot food processor.
Add creme fraiche or sour cream & sliced bananas.
Process to a smooth puree.
Flavor with salt, pepper & lemon juice.
Soup can be diluted with more bouillon if too thick.
Serve warm or cold & garnisheded with parsley & ginger.

*NOTE:
Soup thickens itself from rice & banana. in it and
