This is another of my recipes that makes an appearance every Thanksgiving.
1 lb red potatoes, quartered
1 cup buttermilk
1/2 cup butter plus 1 T
salt and freshly ground black pepper to taste
Place the potatoes in a large pot and cover with cold water by about 1 inch. Bring to a boil over high heat; reduce heat to medium and simmer, uncovered, til the potatoes are tender, about 15-20 minutes. Drain well and return to hot pot to dry slightly.
Remove from heat and mash in buttermilk and butter. Stir in salt and pepper to taste. Stir to smooth and add to a nice serving dish. Top with 1 T pat of butter for a nice presentation.
Fresh parsley and/or garlic also make a nice addition to this side dish.
