This week marked the beginning of mango season for me. I promised you that I was going to post more mango recipes after that mango guacamole that was received very well. I sat down and wondered in what other ways I could use mango. There are mango smoothies, mango in fruit salad, mango juice, mango salsa, mango cake… and right there hit me. Why not mango pancakes? I have made banana pancakes before so mango pancakes wouldn't be so difficult. And it wasn't. All I did was add chunks of mango to my pancake batter and beat it with a hand mixer.

Do you have a good (non-fat) mango smoothie recipe? I am trying to get better about eating (or doing something) for breakfast other than coffee, and fruit smoothies seem to be a good prospect.
