This is a simple recipe for a loaf of banana-tasting goodness!
I had 5 bananas that were past their prime. I mashed them up and mixed in some grated lemon peel, lemon juice (to keep the banana from turning brown), candied orange peel and a handfull of dried cranberries. Add sugar to taste (I go very easy on this...)
Now I added about one cup whole meal semolina, two cups whole wheat flour and twice as much baking powder as you think you will need.
Mix it all up till dough sticks together and spread in paper-lined loaf pan.

Bake at 340°F / 180°C till done

Here is a slice for you! Enjoy with your favorite additions: P&J if that sounds good, butter or margarine if that's what you like... For now, I am having it "plain."

Risa, the semolina is a little trick that works well with lots of vegan baking: usually you would put in eggs. If you don't , I found things are either
1, too dry, because I was too careful with the liquid, or
2, a little soggy, because I was tired of dry cake and there was too much liquid.
This is where the semolina comes in: it handles a lot of liquid easily and cake/bread or whatever comes out nice and moist...
Try it - you will love it!
