1 lb lean ground beef
1 small onion, minced
1/4 cup salsa (I used homemade habanero)
2 T Mexican chili powder
2-3 cloves garlic, minced
pinch salt
1 egg, slightly beaten
corn bread batter
1 cup shredded sharp cheddar (or your favorite)
Preheat oven to 350°. Spray a 9" pie plate with cooking spray.
Mix all ingredients and form into a ball. Carefully transfer to the prepared pie plate and flatten to about a 6" circle.

Pour batter over the meat.

Bake 45-50 minutes. Remove and sprinkle carefully with cheese. Return to oven til the cheese melts, about five minutes.
I served this with sour cream and salsa. I made Matt a milder salsa with a can of diced tomatoes with green chiles, cilantro, onion, lime juice and sea salt.
