This is a light and easy dish that I came up with for tonight’s dinner. As usual, measurements are approximate.
Fantastic!
1 lb boneless, skinless chicken breast, chopped
1 cup orzo
3 cups chicken broth
2 cups broccoli, cut into small pieces
4 T olive oil, divided
1 small onion diced
2-3 cloves garlic, minced
1/2 cup fresh grated Asiago/Parmesan/Romano blend cheese, divided
salt and pepper to taste
1 t fresh lemon juice (optional)
In a large saucepan or Dutch oven, cook orzo in boiling broth for about five minutes. Stir in broccoli and cook for about five minutes more, or til broccoli is crisp tender.

Meanwhile, in a large frying pan or cast iron skillet, add about 2 T oil. Saute onion and garlic til soft. Remove from pan. Add remaining oil and sauté chicken til nice and brown.
Remove pan of orzo and broccoli mixture from heat. Add onion mixture, chicken and lemn juice to cooked orzo. Add about 1/4 cup cheese blend. Stir til well mixed. Season with salt and pepper and sprinkle with additional cheese blend to serve.
