When traveling to the Grand Rapids (MI) area, we always make a point to stop for Mexican food at the Beltline Bar.
I order the humongous Burrito Magnifico filled with chicken and covered with verde sauce and Mexican cheese. But to start things off, we always order a platter of their nachos.
These nachos are rather unusual in that they have ham in addition to ground beef. It really adds a unique touch. This is my version of the nachos and their hot sauce.
1 lb ground beef
1/4 cup Mexican chili powder
Fresh corn tortillas, cut in to strips
Green pepper, chopped
Sliced smoked ham
Shredded cheese (I used 4 cheese Mexican blend and sharp cheddar)
Brown ground beef and drain well. Add chili powder and about 1/2 cup of water. Simmer for 10 minutes or so. Remove from heat and cool slightly.
Meanwhile, brown tortilla strips by frying or baking.
Preheat oven to 350F.
Layer tortilla strips on baking pan. Top with beef, ham, onion, green pepper and cheese. Bake until cheese melts. Serve with your favorite salsa.
Variations: Add sour cream. Add tomato. Serve with guacamole.
Beltline Bar Hot Sauce
This sauce is a little spicy, but not overpowering. I usually prefer habanero salsa on Mexican food, but Matt can’t eat it; it’s a little too hot for him.
Add or subtract to fit your personal preferences.
1 can tomato sauce
hot pepper flakes
minced dried onion
salt to taste
pinch of fresh lime juice
Simmer everything for a few minutes in a small saucepan. Cool and refrigerate for a couple hours before using.
