This appetizer recipe is usually one of the most popular that I make.
It is from my recipe box; I have no idea where it originated.
6 hard boiled eggs
1/4 cup mayonnaise
1 T green onion, minced
2 T pickled jalapeno peppers, minced
1 t mustard (I like using a spicy or Cajun style)
1/4 t ground cumin
1 T cilantro, snipped
1/4 cup fine shred cheddar cheese
salt to taste
chili powder for garnish
sprigs of cilantro
Cut the eggs in half lengthwise; carefully remove yolks to a small bowl. Mash egg yolks; stir in mayonnaise and the rest of the ingredients (except chili powder and sprigs of cilantro); stir to blend well.
Spoon or pipe yolk mixture evenly into egg white halves.
Garnish with chili powder and cilantro sprigs.

Oh man this sounds good! Mexican deviled eggs, Russian deviled eggs; wasabi deviled eggs.........I can see me making a Deviled Egg Dinner one night, with salad!!
